Samak Rice Halwa/ Millet Flour Pudding Scrumptious pudding made with Samak ke chaawal or Barnyard Millets and is apt for people who are fasting. Preparation Time: 10 minutes Cooking Time: 25 minutes Total time: 35 minutes
Serves: 6-7 INGREDIENTS:
Clarified Butter or Ghee- 1/2 cup Samak Rice- 1 cup Sugar- 1 cup Water- 3 cups Almonds- 10 Cashews- 10 Pistachios- 10 Few dried Rose Petals to garnish
DIRECTIONS:
We will start by grinding the Samak rice to a fine powder flour like consistency. Chop all the nuts, almonds, cashews and pistas into slivers.
In a heavy bottomed pan or wok add ghee along with the grounded samak rice. Keep the flame on low. We have to roast on low heat so that it won't get burnt and gets evenly cooked. Keep stirring it continuously till it gets golden brown colour.
Add the chopped nuts to to the Wok to get roasted all with the rice n ghee mix. Reserve few nuts for garnishing.
When the mix reaches to golden brown color add water. Do not worry if you see the mixture has turned watery.
Keep stirring continuously on high flame now. The samak rice will absorb water and will swell up.
When all the water dries and the mix reaches to porridge like consistency add sugar. Mix well by stirring continuously till it becomes dense. Keep stirring till you see halwa has left the sides.
Garnish with slivered nuts and Rose petals. Serve hot. Happy fasting.
