Gajar Halwa Cheesecake Shots

 
Cheesecake made with Gajar halwa and served in shot glasses. An absolute delightful dessert. 

Preparation time: 30 minutes

INGREDIENTS:


FOR THE BASE/CRUST

Biscuits (Good day/Digestive/Marie)- 10

Butter- 2.5 tablespoon

Sugar- 2 tablespoon


FOR THE CHEESECAKE FILLING

Cream cheese- 100 grams (at room temperature)

Whipping cream/ Heavy Cream- 100 ml

Cardamom powder- 1/2 teaspoon

Icing sugar- 3/4th cup

Gajar Halwa- 1/2 cup

FOR TOPPING

Gajar halwa- 1/2 cup

Slivers of Pistas, Cashews and Almonds- 2 tablespoon

Dried Rose petals- 1 teaspoon


DIRECTIONS:


Crush the biscuits and sugar together in a dry grinder or blender.

Melt butter either in a pan or in the microwave.

While it's warm add it in the crushed biscuits mix.

Mix well. Make sure all the biscuit crumbs are well coated with butter.

The mixture should be of sand consistency.


Divide this mix equally in all the glasses.

Spoon the mix gently at the bottom of the glass and press it gently.

Do not press it very hard. It will be eventually pressed down with the moisture and weight of the cheesecake layer.

Keep the glasses in the fridge to set while you make the filling.


Using an electric mixer fitted with the whisk attachment, whisk heavy cream until soft peaks form.

Avoid over beating.

Gently beat the softened cream cheese.

Add in icing sugar and mix well.

Next, fold in whipped cream in this cream cheese mix.

Add in cardamom powder and gajar halwa too.

Gently fold everything.


Put this gajar halwa filling over the biscuit crumbs layer.

You can put about 2 tablespoons of filling in each shot glass.


Top it up with about a teaspoon of gajar halwa in every shot glass.


Garnish with slivers of nuts and rose petals.


Cover and place in the fridge for at least two hours before serving. This way the layers will set properly.

Serve them cold.
