For that, soak the whole red chilies in vinegar for about an hour. Thoroughly clean and wash Parsley and Coriander leaves. When the chilies are well soaked for an hour, add them in the blender’s jar with the vinegar. Add in Pine nuts too along with parsley, coriander, lemon juice, oil and salt. Blend them all together to a smooth paste. For making the Pasta- In a large pot or pan put water for boiling. Add in a teaspoon of salt and 1 teaspoon of oil. Mix well. When water starts boiling, add in pasta and stir it. Let it cook until al dente, about 9-10 minutes or as package instructions. After that drain pasta in a colander, reserving 1/2 cup of pasta stock or cooking water. While pasta is cooking, chop bell peppers in your desired shape. Cut cherry tomatoes in halves. In a pan put 1 teaspoon of oil. When it’s warm add in chopped bell peppers. Sauté them on low heat for about 4-5 minutes. Add in tomatoes and sauté them for a 2-3 minutes. Add in salt, crushed black pepper and pasta stock. Add in about 1 cup of the prepared Pine nuts paste. Mix everything well. Cook for 2-3 minutes. Add in boiled pasta and give everything a good mix so that the paste coats pasta well. Your pasta is ready to be served. You can serve some more Pine nuts paste and chili flakes along with the pasta. Serve hot. Enjoy!! |
