Raj Katori/ Katori Chaat/ Raj Kachori A fun spin on the king of all Chaats, RAJ KATORI aka RAJ KACHORIS !!! Instead of deep frying the Poori which is used in Raj Kachoris I have made Katoris or Cups which are made by baking Filo sheets. Crispy Phyllo/Filo pastry sheets cups, filled with all the regular flavorful and scrumptious fillings, are used in this Raj Katori. So let’s get started! Let me show you how you could make these yummy Raj Katoris!!!

How to make STUFFING
INGREDIENTS:
Black Chana- 1 cup, boiled Moong beans- 1 cup, boiled Potatoes- 1 cup, boiled, peeled and cubed Bhalla pakodis- 6-7 ( click here (Bhalla papdi chaat) to check the recipe of Dahi bhalla) Papdis- 9-10 (I have used store bought papdis) Boondi- 1/2 cup ( click here (boondi laddo) to check the recipe of Boondi) Fine Sev- 1/2 cup (I have used store bought sev) Mint Coriander chutney- 1/3rd cup Sweet Tamarind chutney- 1/3rd cup Curd/ Yogurt- 1 cup, beaten well with 1 teaspoon of sugar Salt- as per taste Red Chili powder- as per taste Chaat Masala Powder- as per taste Roasted Cumin Powder- as per taste Pomegranate arils- 1/2 cup, to garnish Chopped Mint Coriander leaves, to garnish
How to assemble KATORIS
First place a Katori on the serving plate. Put some pieces of bhalla pakodi. Drizzle some curd. Now, put some potato cubes. Sprinkle some masala powders. Next add some boiled chanas, moong beans and crushed papdis. Top it up with generous drizzle of beaten curd. Sprinkle some more masala powders followed by generous drizzle of both the chutneys. Next, add some boondi and sprinkle some sev on top. Lastly garnish with pomegranate arils and chopped coriander and mint. This way make all the Raj Katoris. Serve them immediately or else they will be soggy. Enjoy the yummy Chaat!!!
