VANILLA CAKE WITH VERY BERRY COMPOTE
Lovely month of love calls for something extraordinary, something special.
To be in love is a magical experience. The feeling of being in love with someone is priceless. It makes people expressive and kindles the desire to pour our heart out to that special person.
Be it the fleeting minutes of romance that you had with your beloved or those special moments of emotional connect that you felt with your partner, every fond memory that you create goes on to last forever. Some will say it with flowers while others will bring on the bling. Others will get creative with customized dates while some will play it low-key with an at-home dinner date and together time.
However I have always believed that this special day of love is not only a lover’s day but my heart beats out for close friends and family too who have been understanding, loyal and supportive in each and every step of my life. So dedicating this Lovely dish to love of my life, my family and my friends. Keep spreading love and happiness.
This cake is a simple Vanilla Cake but the highlight or STAR of this simple cake is BERRY COMPOTE.
This compote just takes this otherwise simple vanilla cake to another level.
The flavors of vanilla, cream and berries is just so smooth and silky and explosion of flavors in your mouth.

Now coming to the Star of this cake COMPOTE
For making Compote we need:
INGREDIENTS
2.5 cups-Mixed Berries (mix of Strawberries,Raspberries and Blueberries)
1/4th cup-Sugar
1Tablespoon-Lemon Juice
DIRECTIONS: Hull n chop strawberries.
Muddle Raspberries n Blueberries.
Put all the ingredients in a pan and give it a good stir.
After 5-10 mins it will start getting thickened and coming together.
Reduce the flame and cook further for 5-7 mins till it covers the back of the spoon.
Tadaaa Compote is ready.
For the filling layers I added 1tbsp of compote to ½ cup of buttercream.
