Salad with Pomegranate Vinaigrette Yummy salad with easy to make Vinaigrette INGREDIENTS: For salad
Rocket leaves- 2 cups Orange- 1 (peel and deseed) Apple- 1 (cut into slices) Cucumber- 1 (cut into slices) Cherry Tomatoes- 10 Red radish- 3-4 (cut into slices) strawberries- 2 Black Grapes- 10 Cottage Cheese/ Paneer- 1 cup cubed Pomegranate arils- 1/2 cup Pecan nuts- 10 Cashew nuts- 10 Macademia nuts- 10
For Dressing
Pomegranate juice- 1 cup White Vinegar/ Balsamic Vinegar- 2 tablespoon EVOO( Extra Virgin Olive Oil)- 1/3 cup Sugar- 1 teaspoon Salt- 1/2 teaspoon Freshly ground Black Pepper To Taste
DIRECTIONS: In a small saucepan, over high heat, boil the pomegranate juice until reduced to one-third cup. It will take approx. 10-12 minutes. Remove from heat. While still warm, stir in rest of the ingredients listed under dressing. Set aside to cool. Meanwhile, slightly roast the nuts in a pan (optional). In a big bowl, mix all the ingredients of the salad. Mix and toss the dressing with the salad. Arrange the salad in a platter to be served. Throw in some roasted nuts and Voila! Your salad is ready!
