Preparation Time: 10 minutes Cooking Time: 15 minutes
Yields: 12 ladoos INGREDIENTS: Cottage cheese or Paneer or chenna- 2 cups Sweetened condensed milk- 1 can or 400 grams Rose water- 1 teaspoon Cardamom powder- 1/2 teaspoon Ghee- 1 teaspoon Saffron strands/ Kesar- 15-20 Milk- 1 tablespoon Pista Slivers- 10-12
DIRECTIONS:
For making Malai Ladoos first we have to prepare Paneer or cottage Cheese. For making home made paneer check this hyperlink kalakand chees I prefer using home made paneer to make sweets. However, if you are using store bought paneer, make sure it should be fresh and without any salt.
Warm the milk and add in the kesar and keep aside.
Blend paneer with half of the condensed milk in a food processor. Blend till you see there are no lumps and the texture of the mixture is silky smooth.
Put this mixture in a pan on low heat. Add remaining sweetened condensed milk and mix well. Stir continuously for about 10-12 minutes.
Next add cardamom powder and Rose water and mix again. Keep stirring continuously until it turns to a solid mass. Add Ghee and mix well.
After that turn off the flame and take out the mixture on a plate. Let the mixture cools down a bit, just enough to be handled by bare hands. Next, grease your palms with ghee. Divide the mixture equally into lemon sized balls. Take a lemon-sized mixture and roll into balls. Roll so that there are no cracks on the surface. Surface should look shiny, crack free and smooth. Garnish ladoos with Saffron leaves which were soaked in milk and pista slivers.
Alternatively you can make Modaks with the same mixture. Grease the Modak Mold with little ghee. Stuff a portion of the mixture in the Modak mold. Close it tightly. Open and your Modak Ladoos are ready.
Enjoy the yummy Ladoos!!
