Creamy Pine Nut Paste Pasta
This super easy, quick to make, very creamy Pasta is super delicious in taste.
You don’t need any fancy ingredients to make this pasta. Your pantry staples are good enough to make this sumptuous recipe.
And did I mention that this recipe is-
NO ONION
NO GARLIC
NO CHEESE
Yes, you read it right, this is without cheese. But believe you me, this is so so creamy that you won’t miss your cheese.
And why I have opted for a non-traditional style?
Well, I am neither a Pasta nor a Cheese person ;) Weird na!!
I don’t like cheese (the only exception is Pizza) and same is with pasta. There’s no particular reason behind it but I don’t like them on my plate.
I made it for my son who loved it and was constantly praising it, he gobbled down in no time. This prompted me to try it out too, and I loved it to the core. So, finally a pasta without cheese.
This paste is so versatile and so delicious. It makes everything so yummy. You can use it in your pasta, use as a spread for your toasts, use as a dip for veggies.
Or lick it off on its own just like me ;)

Coming back to our recipe of Pasta. Let's jump to the recipe part-
INGREDIENTS:
Pasta- 2 cups
Water- 6 cups
Salt- 2 teaspoon
Oil- 2 teaspoon
Red bell pepper- 1
Green bell pepper- 1
Cherry tomatoes- 15
Black pepper- freshly grounded, according to taste
For the Pine nut paste-
Pine nuts- 1 cup
Whole red chilies- 4-5
Vinegar- 1 tablespoon
Parsley- 1 bunch
Coriander- 1/2 bunch
Lemon juice- 1 teaspoon
Olive oil- 1 tablespoon
Salt- 1 teaspoon (adjust according to your taste)
DIRECTIONS:
For making the Pine nut paste-
We will start making this pasta by making the creamy pine nut paste first.
For that, soak the whole red chilies in vinegar for about an hour.
Thoroughly clean and wash Parsley and Coriander leaves.
When the chilies are well soaked for an hour, add them in the blender’s jar with the vinegar.
Add in Pine nuts too along with parsley, coriander, lemon juice, oil and salt.
Blend them all together to a smooth paste.
For making the Pasta-
In a large pot or pan put water for boiling. Add in a teaspoon of salt and 1 teaspoon of oil. Mix well.
When water starts boiling, add in pasta and stir it. Let it cook until al dente, about 9-10 minutes or as package instructions.
After that drain pasta in a colander, reserving 1/2 cup of pasta stock or cooking water.
While pasta is cooking, chop bell peppers in your desired shape.
Cut cherry tomatoes in halves.
In a pan put 1 teaspoon of oil. When it’s warm add in chopped bell peppers.
Sauté them on low heat for about 4-5 minutes.
Add in tomatoes and sauté them for a 2-3 minutes.
Add in salt, crushed black pepper and pasta stock.
Add in about 1 cup of the prepared Pine nuts paste.
Mix everything well. Cook for 2-3 minutes.
Add in boiled pasta and give everything a good mix so that the paste coats pasta well.
Your pasta is ready to be served.
You can serve some more Pine nuts paste and chili flakes along with the pasta.
Serve hot.
