Tiramisu

Tiramisu

(Eggless & Non Alcoholic)

A very rich, delicious and decadent recipe of Tiramisu which is not only eggless but is non alcoholic too. The luscious, silky, velvety cheese and cream mix sets and gels so perfectly with the coffee infused biscuits. It’s a match made in heaven!!

A very classic Italian dessert ‘Tiramisu’ which literally translates to ‘pick me up’ or ‘cheer me up’. And the moment you see this dessert you instantly want to have it. One bite from it will put you in a good cheerful mood!

For making this scrumptious dessert, you actually don’t need truckloads of ingredients. Very few ingredients are used to make this uber looking scrumptious dessert. Making this dessert takes only 20-25 minutes but the hardest part is the waiting part for the tiramisu to get set. Setting of Tiramisu takes about 5-6 hours.

INGREDIENTS OF EGGLESS TIRAMISU

1- LADYFINGERS (Biscuits) : THE BASE

At the base of Tiramisu, light and spongy ladyfingers are used. These biscuits are made with eggs, sugar and apf. They are known as ’savoiardi’ in Italian and are perfect for tiramisu as they absorb the syrup well without getting soggy.

I have used store bought ladyfingers. (Soon will try and share the eggless ladyfingers recipe too).

However, you can make eggless version of these biscuits. Or else you can use either digestive biscuits or any other biscuits which are sweet, spongy and light.

2- COFFEE SYRUP

Traditionally the ladyfingers are dipped in a concoction of water, coffee and liquor.

Since, we are a family of teetotalers, so I completely avoided the alcohol part.

Just brew water and coffee together and this syrup will give a perfect flavorful kick.

3- MASCARPONE CHEESE & CREAM MIX

Traditionally a mixture of eggs, sugar and mascarpone cheese is made for making this creamy layer.

Since, we are not using eggs here, I have used whipping cream.

Whip the cream with icing sugar till it gets stiff peaks. Fold in the mascarpone cheese gently and your cheesy creamy ‘tiramisu cream’ is ready. It’s light and fluffy and gorgeous and delicious.

If you don’t have mascarpone cheese, you can use cream cheese but taste won’t be the same.

4- COCOA POWDER: THE TOPPING

Dust the tiramisu with cocoa powder to give a chocolatey kick. It helps in balancing the sweetness and creaminess. And above all who can say No to chocolatey flavors;)

NOTES & SPECIAL TIPS TO MAKE PERFECT TIRAMISU

1- Always use cheese at room temperature. This results into a soft and creamy mix rather than stiff or lumpy.

2- Using of Icing sugar is preferable as it gets incorporated into the cream mix evenly.

3- Fold the whipped cream into the mascarpone cheese gently so as to retain the airiness and lightness.

4- Ladyfingers are just soaked in the coffee syrup. You have to be quick here. Just dip in the syrup and take them out. Do not leave them in the syrup. Otherwise they will become soggy and mushy.

5- Make sure to evenly layer all the layers.

6- While spreading the cream mix on the ladyfingers be very gentle so as not to break the ladyfingers top part.

7- Let the tiramisu set in the fridge for about 5-6 hours. This will result in a very flavorful and well set tiramisu.

Mascarpone Cheese- 1 cup (about 225 grams)

Icing sugar- 1/2 cup + 2 tablespoon

Cocoa powder- 2 tablespoon

DIRECTIONS:

We will start by making the coffee syrup first.

For that take one cup of water. Warm it.

Add in coffee powder and mix well.

Keep it aside and let it come to room temperature.

Next, take chilled whipping cream along with 2 tablespoons of icing sugar.

Whip this to stiff peaks with the help of whip attachment attached to hand mixer or stand mixer.

In a separate mixing bowl take mascarpone cheese along with half cup of icing sugar.

Give it a quick whip just to mix them both together.

After that, fold the whipped cream into the mascarpone cheese gently so as to retain the airiness and lightness.

Once it’s all combined, set it aside. Your tiramisu cream is ready.

Next, we will assemble the tiramisu.

To assemble the tiramisu, dip the ladyfingers in the coffee syrup. Don’t soak them. Just quickly dip them to get them wet.

Place them in a single layer on the bottom of your serving dish.

Top this with half of the prepared tiramisu cream. Spread it evenly.

Add another layer of dipped ladyfingers. Smooth remaining tiramisu cream over the top.
