Samak Rice Halwa/ Millet Flour Pudding
Sama/Samu/Varai/Samak/ Mordhan/Barnyarn millet- This variety of Millet is known by many names.
Millets are a group of highly variable small-seeded grasses, widely grown around the world as cereal crops/ grains. Millet is tiny in size and round in shape and can be white, gray, yellow or red. Millets are very high in their nutrition content. Each millet is three to five times nutritionally superior to rice and wheat in terms of proteins, minerals and vitamins. Millets are rich in B vitamins, calcium, iron, potassium, magnesium, zinc, also gluten-free and has low-GI (Glycemic index) thus millets are suitable for people having allergies/intolerance to wheat. Also for diabetics, weight loss millets are excellent.
Barnyard Millet and sabudana, kuttu atta, singhora atta,rajgiri atta are mainly used as a fasting food.They are specialy consumed during Navratri,shivratri,ekadashi and on other fasting days. During these fasts generally special meals are prepared with sabudana, samak or swang,potatoes etc. and you can't even have the usual salt but you have to have rock salt or sendha namak.
The most popular recipes to be consumed during these days are sabudana khichdi, sabudana vada, sabudana kheer,samak rice pulao to name a few.
Today, I am going to share a very simple,quick and easy to make Halwa which is apt for people who are fasting.
I have also tried this one for the first time but it came out real scrumptious. I gave a bowl full to my neighbors too and they were totally going gaga over this halwa.
I think I should stop talking now and better jump to recipe part by listing the Ingredient list.
INGREDIENTS:Clarified Butter or Ghee- 1/2 cup
Samak Rice- 1 cup
Sugar- 1 cup
Water- 3 cups
Almonds- 10
Cashews- 10
Pistachios- 10
Few dried Rose Petals to garnish
DIRECTIONS:We will start by grinding the Samak rice to a fine powder flour like consistency.
Chop all the nuts, almonds, cashews and pistas into slivers.
In a heavy bottomed pan or wok add ghee along with the grounded samak rice.
Keep the flame on low. We have to roast on low heat so that it won't get burnt and gets evenly cooked.
Keep stirring it continuously till it gets golden brown colour.
Add the chopped nuts to to the Wok to get roasted all with the rice n ghee mix. Reserve few nuts for garnishing.
When the mix reaches to golden brown color add water. Do not worry if you see the mixture has turned watery.
Keep stirring continuously on high flame now.
The samak rice will absorb water and will swell up.
When all the water dries and the mix reaches to porridge like consistency add sugar.
Mix well by stirring continuously till it becomes dense. Keep stirring till you see halwa has left the sides.
Garnish with slivered nuts and Rose petals.
Serve hot.
