MANGO PANNA COTTA WITH FRUIT CREAM

Mango Mango and Mango.... Mangoes are everywhere. Summers bring with them the King of Fruits"MANGO"
I think no one can say No to Mango. Be it any variety it is relished with full fervor by all.

Three heavenly desserts's combo and I bet one bite of it will transfer you to a state of bliss.

Panna cotta means 'cooked cream'. It is made by sweetened cream thickened with gelatin and molded.
This molded chilled dessert is popular throughout Italy. It is easy to make and can be prepared in advance.
Although the name means 'cooked cream', the ingredients are only warmed enough to dissolve the gelatin and sugar.

If you want to make a dessert for your party that looks classy and leaves you with loads and loads of compliments you can bet on this one.

I made this heavenly dessert for a get together at my place. And needless to say this became the star of the party.

It looks and tastes wonderful with ripe red fruits such as raspberries, strawberries, or sweet cherries.
Panna cotta is often served with a coulis of berries, or a sauce of caramel or chocolate.

But instead of coulis or sauce I gave this heavenly Panna cotta another heavenly dessert as combo- Fruit Cream. And the combination just gelled so well.

Being a vegetarian i've not used gelatin and instead used Agar Agar strands which is a vegetarian version of gelatin.

I have used alphonso mangoes to make the mango pulp. Use any good quality sweet mangoes. Just make sure they are not fibrous, otherwise Panna Cotta will not be smooth.The key is to get the right texture which is not too firm but soft with a bit of wooble, like the texture of custard.

Now, over to the recipe part of this scrumptious dessert. (I made a big batch as this was for a party- Approximately 30 servings. You please adjust the ingredients according to your need.)

MANGO PANNA COTTA

INGREDIENTS:

4 medium alphonso mangoes
5 cups heavy cream
4cups whole full fat milk
16 tsp chopped agar agar strands
2 cups water for soaking the agar agar strands
2 cups Sugar

DIRECTIONS:
We have to start first by chopping the agar agar strands in small pieces and soak them in warm water for 10 mins. Chop the agar agar in real small or tiny pieces with the help of kitchen scissors.

Peel and chop the mangoes and then make a smooth puree of the mangoes in a blender.

Mix cream, milk and sugar in a pan or sauce pan and keep it on low flame. Keep on stirring at intervals while the cream mixture comes to a gentle boil and sugar gets completely dissolved.

At the same time, keep the agar agar and water solution on low flame in another pan. Keep on stirring the agar agar solution and let it cook till the agar agar strands are dissolved.

When the cream+milk+sugar mixture come to a gentle boil. Switch off the flame.

Mix hot agar agar solution into the hot cream+milk+sugar mixture and stir very well with a wired whisk.

Cook this mixture on low flame for about 5 minutes. At any point of time mixture should not come to a rolling boil.

After this switch off the flame.

Let it become little less hot. After 5-10 minutes add the Mango puree.

Mix it well with the help of a wire whisk. The mixture should be smooth.

Now, pour this prepared Panna Cotta either in individual glasses/bowls or in a big bowl.

Let them come to room temperature and then keep them in fridge.

FRUIT CREAM
INGREDIENTS:

Flavored Cream- 500ml (I used strawberry flavour)
Whipping cream- 600 ml
Fruits of your choice
I used Banana- 1
Apple-1
Strawberry- 5-6
Pineapple- 2 roundels
Blueberries- a handful
Grapes- a handful
Mango- 1
Dragonfruit -½

Cut them all in small pieces.
Pomegranate pearls to garnish

DIRECTIONS:

Whip the chilled whipping cream at the lowest speed possible until its airy and fluffy. You can use a hand blender or stand mixer with whip attachment.

Don't let the peaks come.
Now add the flavored cream gently and whip it again at the lowest speed for 2-3 min.

Gently add fruits to the whipped cream.
Its ready.

You can serve it in individual bowls or in ice cream cones too.
(P.S. This fruit cream is always a hit at my place)

Now, coming to the assembling part.
When the panna cotta is still warm pour in the glasses to be served.
You can tilt the glasses to have unique patterns or can set it in individual molds.
Remember to grease your molds (If you want to take them out of mold) before pouring the panna cotta. This way the de molding will be easy and it will not disturb the pattern.

Keep the glasses/dish in the fridge for 4-5 hours.
I kept them overnight so that nobody will sneak in the kitchen and touch my glasses.

When the panna cotta is set fill the glasses with fruit cream.
Decorate with some more fruits.
Keep them again in the fridge.
Serve chilled.
