Coconut Milk Chia Seeds Pudding with Mulberry Compote
A healthy bowl of Chia Seeds soaked overnight in Coconut Milk topped with ohhhh so so delicious Mulberry Compote!!

When you start your day with this deliciousness you kinda know that you will have an awesome day!!
I have shared my way of making this bowl. Sweetness and nuttiness of Coconut Milk is perfectly balanced by the tartness of Mulberries.
However, you can use Almond milk or any other milk of your choice. You can use fruits of your choice. Any other type of Berries or Mangoes work equally well with this pudding. Same goes with toppings too. You can top it up with whatever nuts you like. Sometimes I add walnuts and cashews too. I have added Stevia as sweetener, you can add Honey or Agave syrup or brown sugar, whatever is your preference.
There’s no fixed way to do it right. Just tweak the recipe the way you like.
Before jumping to the super simple and easy recipe let’s first see how beneficial these chia seeds are.

3-Chia seeds are relatively easy to find in any major grocery store. They are black in color and they have a mild, nutty flavor.
4-Raw, they can be sprinkled on cereal, yogurt, oatmeal, or smoothies. They can also be eaten cooked, added to baked goods like bread and muffins. Mixed with water, they can replace eggs in vegan cooking.
Now when we are fully equipped with the knowledge of chia seeds let’s jump to the recipe part.
Let's start with making compote first.
HOW TO MAKE COMPOTEPreparation Time: 5 minutes
Cooking Time: 15-20 minutes
Makes- about
INGREDIENTS:
Mulberries- 3 cups
Brown Sugar- 2.5 cups
Lemon juice- 1 tablespoon
DIRECTIONS:
Put the Mulberries in a pan.
Slightly crush or mash them with the back of a ladle.
Switch on the heat.
Add in the sugar. The sugar will melt and release moisture.
Let the mixture bubble for about 15 minutes.
The consistency will change from watery to viscous.
When the consistency starts to thicken up add in lemon juice.
Cook for another 5 minutes.
Compote is ready.
COCONUT MILK CHIA SEEDS PUDDING
Preparation time: 10 minutes
Soaking time: 5-6 hours, preferably overnight
Serves: 4
INGREDIENTS:
Coconut Milk- 400 milliliters
Chia Seeds- 4 tablespoon
Sweetener- 2 sachets of Stevia
Handful of Almonds, chopped
DIRECTIONS:
We will start by soaking the Chia seeds in the milk.
In a bowl put milk, sweetener and chia seeds. Mix them well.
Keep the bowl in the fridge for minimum 5-6 hours or overnight.
Next morning, take the chia seeds bowl out of the fridge.
By this time they will swell up and have absorbed all the moisture of the milk.
Spoon out the prepared chia seeds in individual serving bowls or glasses.
Top it up with Mulberry Compote.
( I have added 1 tablespoon of Compote to each bowl. You can adjust according to your choice).
Garnish with chopped almonds.
Enjoy the cool treat!!!
