Pecans Goji berries Coconut Cookies
Ahaa!!!! My favourite time of the year. WINTERS.... And Winters bring Holiday season with it. The happy times, the cheerful times.
In these cold winter months, what do you want? A cosy quilt, a hot cup of coffee accompanied with something yumm to munch on is always appreciated by everyone.
Holiday baking mood is on and what can be better than some nutty and fruity Cookies to go along with your steaming cup of coffee.

A very simple and easy recipe to make coconut cookies. These cookies are very delicious and scrumptious.
Jam packed full of all the good and healthy ingredients like coconut, goji berries and pecans they are just perfect for anytime hunger pangs!! And the addition of Custard powder took it to next level of deliciousness.
Do give them a try this festive season.
Dry desiccated coconut- 4 cups
Condensed Milk- 1 can(395 grams)
Custard powder-3/4th cup
Milk- ½ cup
Sugar ( Add if the coconut is unsweetened)- 3 tablespoon
Goji Berries- 1/4th cup
Pecans- 1/4th cup, chopped DIRECTIONS:
Line a baking tray with parchment paper or wax paper and spray non stick spray or smear it with oil generously.
Preheat the oven to 180*C for 15 minutes.
In a mixing bowl, combine sweetened milk, custard powder and milk. Whisk everything until well blended.
You can use a stand mixer too.
Next add desiccated coconut and sugar.
Combine it well and the batter should be nice and firm.
Add in Goji berries and chopped pecans.
Mix everything well.
Now drop tablespoonfuls of dough or lemon sized dough about 1 inch apart on the baking sheet.
Flatten the dough balls gently with your hand.
Bake it in the preheated oven at 180*c for 15-20 minutes or until they become golden around the edges (which exactly took 18 minutes in my oven).
