Endless cups of tea, warm blankets, bliss of warm quilts, cool breezes and outdoor sun AHHHH....this is that time of the year again, WINTERS!!!! My favorite season and favorite time.
Though, Dubai, the place where I live, does not experience that much dip in the temperature but still for us Dubaiites anything between 20-25 in the weather forecast announces the official arrival of Winters ;)
Cool weather not only affects a change in wardrobe but also calls for change in food preferences too. A hot steaming cup of coffee, warm snuggly quilt, favorite movie on Netflix, your life is sorted.
Apart from other hot beverages, soups are Winter's perfect food. Pair your soup with either bread or crackers and it becomes a complete meal. Me and my family love having soups for Dinner. I always try to make my soups flavorful, nutritious and healthy. There are days when we just skip dinner and instead have Soup as our appetizer and main course.
That is the reason I tend to make soups with fresh vegetables. I don't like to add any thickening agent in my soup. They are just empty calories. Instead, I prefer adding some natural ingredient to the soup which not only acts as a thickening agent come creamer but also gives it a health quotient.
Here, in this Cauliflower Soup you will be surprised to know that I have used Gram Flour as the thickening agent. And believe me, the result just surpassed my expectations. The nutty flavor of gram flour gave this soup a very distinct flavor and taste.
I have paired this healthy soup with home made Gram Flour Crackers. Make a big batch of these Crackers and you can enjoy them with chutneys, ketchups, salsa or even guacamole. If you don't want to make these crackers give it a pass and you can have toasted bread or croutons with the soup.
For me this is an ideal combo of Soup+Crackers which has all the vital elements, vitamins and minerals of Food. That is why this is "Meal In A Bowl"

Let's see how to make this no-fuss hearty comfort food by having a look at the ingredients first.INGREDIENTS:FOR SOUP:
Cauliflower- 3 cups Florets
Onions- 2 medium
Ginger- 2" piece
Gram flour- 4 Teaspoon
Clarified Butter or Ghee/ Oil- 1 teaspoon
Asafetida- a pinch
Turmeric powder- 1 teaspoon
Dry mango powder- 1/2 teaspoon
White pepper powder- 1.5 teaspoon
Salt- to taste
Lemon Juice- 2 teaspoonFOR CRACKERS:
Gram flour or Besan- 1 cup
Salt- to taste
Red Chili Powder- 1 teaspoon
Coriander powder- 1 teaspoon
Garam Masala powder- 1 teaspoon
Dry Mango powder- 1 teaspoon
Dry Fenugreek leaves/ kasoori Methi- 2 teaspoon
Carom seeds/ Ajwain- 1 teaspoon
Clarified butter or Ghee/ Oil- 1 teaspoon
Water- to bindDIRECTIONS:FOR SOUP:
In a pan put cauliflower florets, ginger and onions.
Add in 3 cups of water.
Cover and let it come to a rolling boil.
Lower the flame and let it cook on low heat for 5-10 minutes.
Switch off the flame.
Let it come to room temperature.
With the help of a blender blend the boiled cauliflower mix well.
In a wok or pan put clarified butter.
Keep the heat at low.
Put gram flour and sauté till it gets a nice golden brown color.
Put asafetida and sauté well.
Now add 1 cup water to the pan. Give the water gram flour mix a good mix so that there are no lumps.
Next, add the pureed cauliflower mix.
Add rest of the ingredients and mix well.
Give it a boil and it's done.
The steaming hot soup is ready.
Now, we will make Gram flour Crackers to pair with this yummy soup. FOR GRAM FLOUR CRACKERS:
In a deep bowl put all the ingredients listed under crackers ingredients list.
With the help of water bind it into a hard dough.
(You will be needing around 1/2 cup- 3/4th cup of water to make this dough).
Keep the dough at rest for 10-15 minutes.
After that, divide the dough in 4 equal portions and make balls.
Roll out one dough ball with the help of a rolling pin. Just make sure to roll it out thin and even.
Prick the rolled out ball with the help of a fork.
Cut it into your desired shape.
Meanwhile, keep a pan on heat.
Grease it with oil.
Put the cut out crackers on the hot pan and lower the flame.
Let them cook on low heat for 3-4 minutes.
Once done turn them and let them cook on the other side too.
The heat should be low otherwise the crackers will not be crispy.
In the same way make all the crackers.
Enjoy the hot steaming soup with delicious crackers.
