Grilled Pineapple with peanuts
“Be a pineapple: Stand tall, wear a crown, and be sweet on the inside.”
Spiky and Prickly to touch, hard to cut, but once the rind is off, you get amazingly delicious, succulent and flavorful pineapple pieces.
I love Pineapple in any form, be it mocktails, mojitos, desserts, salsa. But this grilled pineapple salad just took my heart away. I can call it a salad or an appetizer or a very healthy dessert, but what’s in the name ;)? You can put it in whatever category you like. I simply loved it.
This is so easy to make and super delicious in taste. The crunchiness of peanuts is taking it a notch higher in taste.
Such minimal ingredients are used in this recipe and still you get such a gorgeous beauty on your plate
With this quick and easy recipe you will be sure to have the MOST delicious pineapple and your family will be raving about it.
Pineapple is delicious on it’s own, but grilling is by far the best way to eat pineapple. Grilling brings out all of the pineapple's juices and makes it best for grilling. It is high in sugar and that’s why it caramelizes beautifully over the high heat.

1 cup- 250 ml
INGREDIENTS:
Pineapple- 1, small. Rind cut off and cored. Took 14-15 pieces of about 2*2” in size and about 1” thick.
Peanuts- 1/2 cup
Chili flakes- 1/2 teaspoon
Mint, Cucumber & beetroot slices- to garnish
Cooking spray or oil- for brushing
For the marinade-
Lemon juice- 1 tablespoon
Honey- 1 tablespoon
White pepper powder- 1/2 teaspoon
Pink salt/ Salt- 1/2 teaspoon
DIRECTIONS:
In a bowl, combine the honey, lemon juice, white pepper powder and salt. Mix everything well.
Toss the pineapple pieces with the prepared marinade and let it sit for about an hour.
Meanwhile, you can prepare peanuts ( if using raw ones)
In a pan dry roast peanuts on low flame till they have nice brown color.
It will take about 15-16 minutes to roast them. Take them out in a plate.
Let them come to room temperature.
Once they are good to handle remove the skins of roasted peanuts.
After an hour, the pineapple pieces are well marinated and it’s time to grill them.
Take the pieces out of the marinade.
In the leftover marinade put your roasted peanuts and toss them well.
Heat the grill or a grill pan.
Lightly coat the pan with cooking spray or oil.
Put the pieces in the pan and cook the pieces for about 3-4 minutes on medium heat. Or till they get the grill marks on them.
Flip over and do the same.
Once done, take them out.
Arrange the pieces in a serving plate.
Pour over roasted peanuts along with the leftover marinade.
Sprinkle some chili flakes.
Garnish with mint leaves and cucumber & beetroot slices.
Serve warm.
