POTATO PUFF PATTIES/ POTATO PUFFS
A very popular Indian snack prepared with puff pastry sheets and a filling of spicy potato mixture and baked to perfection.
Puff patties or Puffs are a very popular snack in India that is available in almost all bakeries. These are either served as a tea time snack or at parties and get togethers. You can even pack these in your kid’s tiffin boxes.
I remember these puffs used to be a favorite snack in my school and college canteen. We friends used to eat them almost daily.
I have made a very simple potato filling just how we used to relish them in our childhood days. However, you can make the filling as per your taste. You can have vegetarian filling like- peas & potatoes, mix vegetable, paneer, onion paneer...or you can have non vegetarian filling according to your taste.
To make these puffs I have used store bought pastry sheets to make things easier;) If you are using the readymade pastry sheets then making these puffs takes just about an hour or so. I have kept the filling part to a basic minimum according to the ingredients which are easily available in everyone’s pantry.
Such a delicious and scrumptious snack to dig on over a cup of tea with your family or friends. Do try to make them.
INGREDIENTS:
Puff pastry sheets- 10 (about 4x4” squares)
Milk- 1/4th cup for brushing
For Filling-
Potatoes- 5, boiled
Oil- 1 tablespoon
Cashew nuts- 10, chopped
Cumin seeds- 1 teaspoon
Coriander seeds- 2 teaspoon
Turmeric powder- 1 teaspoon
Red chili powder- 1 teaspoon
Coriander powder- 1 teaspoon
Garam masala powder- 1 teaspoon
Chaat masala powder- 1/2 teaspoon
Dry mango powder/ Amchoor powder- 1 teaspoon
Salt- 1 teaspoon
DIRECTIONS:
Firstly we will prepare the Puff Pastry sheets.
For that remove frozen pastry sheets from the freezer.
Thaw it at room temperature for about 40 minutes to 1 hour or until pastry unfolds easily.
Meanwhile, let’s prepare the filling for the patties.
Mash all the boiled potatoes.
Coarsely ground the coriander seeds.
Heat oil in a pan.
Add in cumin seeds, coriander seeds and chopped cashews.
Once seeds start crackling and cashews will become little brown add in boiled and mashed potatoes.
Add in all the spices or masalas mentioned in the ingredients list.
Mix everything well.
Keep it on low flame for 3-4 minutes till all everything is well combined.
After that switch off the heat and taste test the mixture.
Keep it aside and allow it to cool down completely.
Mixture is ready and by this time pastry sheets would be well thawed.
Preheat the oven at 180*C.
Line your baking tray with parchment paper.
Now take one pastry sheet square and put about 2 tablespoons of prepared potato mixture on the sheet diagonally.
Apply some water on the edges and seal the edges by pressing well.
You can seal the edges with the help of a fork too. It will give your puffs a nice design along the edges.
Make all the puffs in the same way.
Give all the puffs a milk wash. For that dip the basting brush in the milk and apply it over the puffs.
This will give the puffs a nice golden brown exterior.
Similarly give all the prepared puffs milk wash.
Next place the baking tray with puffs in the preheated oven at 180*C for 25-30 minutes or until you see the puffs in golden color with flaky texture.
Once done remove the tray from the oven and serve the hot puffs with ketchup.
