FRUIT PIZZA/ COOKIE PIZZA
Easy to make, fruity, crowd-pleasing and soul satisfying-this is how I would like to describe this amazing dessert.
This is Fruit Pizza where the base is of a cookie and which is then topped either with creamy, thick cream cheese frosting or with Ganache or with Nutella, whatever the sauce is this is always a treat for your eyes and palate.
My son calls this delicacy COOKIZZA.
Fruit pizzas are lots of fun. Cookies as pizza crust is a really innovative idea. Isn't it?
You can use the basic recipe of Cookie to make a large Cookie crusty base or a bunch of individual, small ones.
Smear it with the sauce of your choice and the topping of lots of fresh fruit is irresistible.
You can change up the fruit if you do a bunch of smaller pizzas. Do single varieties: all kiwi for some, all blueberry for others. That’d make a lovely presentation.
Today, I made this with the ready box of cookie mix which was lying in my pantry cabinet from a long time.
However you can use this simple recipe of
Cookies to make the basic Cookie base.
If you are using a box mix for making the basic cookie base you can follow the instructions mentioned on the box.
As the instructions on the box were to add eggs, so being a vegetarian I skipped eggs and instead added Margarine.I've added 2 tbsp of curd also to the batter to make the base softer. You can give it a skip if you want a firm base.
Take my word when I say this is the yummiest sauce I've ever eaten.
I can make this cookie pizza again and again just for this sauce ;)
It's heavenly.
The yummy Ganache Sauce which I made is like this:
INGREDIENTS:
White chocolate chips- 150 grams
Butter- 4 tablespoons
Milk- 4 tablespoons
Yellow food color- few drops(optional)
DIRECTIONS:
In a heatproof bowl melt chips by heating it for 20 seconds.
In a small saucepan heat together milk and butter. Just give them a good mix till the butter is all melted and mixed.
Pour this mix over melted chocolate.
Now be quick to whisk them all together. Otherwise lumps will form.
Pour and spread this mix over the cookie base.
How to make the Cookie PizzaLine a cookie sheet pan with parchment paper.
Generously spray it with oil or grease it with oil.
Spread the cookie dough on the parchment paper evenly.
And press the whole quantity of dough into the sheet pan.
Bake in a preheated oven for 15-20 minutes at 180*c.
But keep an eye after 12-13 minutes.
Bake it till it’s golden brown but not very crisp.
Then just let the crust cool completely.
Once it's completely cooled pour the prepared sauce over it.
Spread it evenly with the help of a spatula.
Keep going until it’s all covered except for a rim around the edge, just like how it's in a pizza.
Keep it in the fridge for approximately one hour so that the chocolate sauce sets well.
Meanwhile cut all the fruits you want to decorate your cookie pizza with.
Next, take out the cookie base from the fridge and start decorating with cut fruits.
There are no ingredient list for toppings. Why?
Because you can use whatever fruits are there in your kitchen.
Now let your creativity shine and let your creative juices flow to decorate it. Decorate the pizza with sliced fresh fruit– whichever fruit you love and in any pattern you love.
The more colorful the fruit, the better.
The fruits I've used to decorate are:
Strawberries
Blueberries
Red currants
Kiwi
Mango
Raspberries
Blackberries
Pineapple
Pomegranate
I apologize for not taking any “slice” photos. This was so yummm that the moment we cut it and tasted it my camera took a backseat and I completely forgot about clicking. But next time whenever I'll make it I'll make sure to click first and then eat ;)
