Chocolate Bundt Cake with Chocolate Chips and Tutti Frutti
Baking is such a joy. I believe that it tests our patience and perseverance and has a calming and therapeutic effect on me. Every time I bake something and the results are up to my expectations my joy has no bounds. I feel on cloud nine.
One look at this cake and you will fall in love with this beauty. These are not my words and neither I am saying this to boast myself. But my friends for whom I made this, their expressions said it all.
I baked this beautiful Bundt Cake for my dear friends who visited us from India. A simple chocolate cake bursting with the flavors of orange, chocolate and tutti frutti.
Need not to say just a look brought a bright wide smile on their faces.
The texture, the drizzling cream, the fruity flavor everything came out so well and so perfect,I think I need a pat on my back.
A Bundt cake is a cake that is baked in a Bundt pan, shaping it into a distinctive ring shape. As such there's no specific or particular recipe for a Bundt cakes ; however their characterizing feature is their shape. A Bundt pan generally has fluted or grooved sides, but its most defining design element is the central tube or "chimney" which leaves a cylindrical hole through the center of the cake. The design means that more of the mixture touches the surface of the pan than in a simple round pan, helping to provide faster and more even heat distribution during cooking.
I had not used this super cute Bundt pan in a long time so thought of using it and hence this cake.
But you can use any other pan,round, square or rectangle too.
Now, jumping to the recipe part by having a look at the ingredients.
INGREDIENTS:
For CakeAll purpose Flour(Maida)- 2 cups
Baking Powder- 2 teaspoon
Baking Soda- 1 teaspoon
Cocoa Powder- 4 tablespoon
Salt- A pinch
Condensed Milk- 1 can (approximately 400 ml)
Powdered Sugar- 1/4th cup
Oil- 1/2 cup
Fruit Puree- 1 1/4 cup
Vanilla essence- 1teaspoon
Chocolate chips- 2 tablespoon
Tutti frutti - 2 tablespoon
DIRECTIONS:Start by preheating the Oven at 180*C.
Prepare the bundt cake pan by greasing it well with oil or butter and dusting it with flour or else you can generously spray non-stick spray too.
Meanwhile Mix and sift twice All purpopse flour,baking powder, baking soda, cocoa powder and salt.
Mix well Condensed milk,Powdered sugar, Oil, Fruit puree and Vanilla essence.
Now start adding the wet mix to the sifted dry mix.
Mix well by using a hand blender or Stand Mixer's Whip attachment.
Do not overbeat.
If you feel that the batter is towards thicker side adjust it by adding 1-2 tablespoon of milk. The batter should be of dropping consistency.
In the end add dusted choco chips and tutti frutti.
Mix them gently in the batter.
By dusted I mean, mix choco chips and tutti frutti in a bowl. Add in a tablespoon of flour to the bowl. Mix well so that choco chips and tutti frutti are well covered with flour.
Next, sieve them gently. You will be left with dusted choco chips and tutti frutti.
This way while baking they will not sink down to the bottom of the cake.
Pour the batter into the prepared pan.
The pan should be 1/2 to 2/3 full.
Do not overfill it.
Tap the pan 2-3 times for the batter to settle down evenly and to remove any air bubbles.
Place the pan in the preheated oven and bake for 35-40 minutes at 180*C.
After that check by doing Toothpick test. Insert a toothpick in the cake, if it comes out clean the cake is done, if you see some batter is still sticking to the toothpick place it again in the oven.
Once baked, take it out and allow it to cool down completely before doing any frosting.
For the
Glaze or frosting, I tried or rather created a very unusual recipe and to my surprise it was heavenly delicious. Believe me I have to literally stop myself before I could finish it all. Thank God I could manage to save it to frost my cake ;)
It's a very simple combination of few things but sometimes simple things are the yummiest ones!!
INGREDIENTS: Butter- 3 tablespoon (melted)
Icing Sugar- 1.5 tablespoon
Orange Juice- 5 tablespoon
Flavored cream- 1 can ( 170 grams)(store bought)
DIRECTIONS:
Just whisk everything together and voila you will get the world's most yummiest drizzle. The orange flavor with cream and butter is just so blissful!!
Keep this in the fridge for some time to set.
By the time our cream will get chilled let's prepare sugar solution to moisten the cake.
Moisten the layers with SUGAR SYRUP.
In a pan put 2 tablespoon water and 2 tablespoon Sugar.
Just warm it till the sugar melts and gets completely dissolved.
Let it cool.
When its completely cooled add 2 tablespoon of Orange Juice.
Mix it well.
Now moisten the cake completely with this sugar solution.
How to assemble the Cake
Put the cake on the platter to be served.
Drizzle it generously with the thick orange cream.
Garnish with some fruits of your choice.
Cut a big slice for yourself and Bon Appetite!!!
