BEETROOT SALAD WITH YOGURT DIPS

But Who says diet food is boring and monotonous.
 
Try this “Beetroot Salad” with yummy dips and I’m sure it’ll become a staple for you.
 
Its a very SIMPLE, HEALTHY,QUICK & SUPER EASY to make Recipe but full on taste.

The beetroot is the taproot portion of the beet plant.
 
The usually deep purple roots of beetroot are eaten either boiled, roasted or eaten raw, either alone or combined with any salad vegetable.
 
Whether you roast it whole, blend into a classic soup or drink as juice like the Olympians do – beetroot is low in fat, full of vitamins and minerals and packed with powerful antioxidants – a health-food titan.
 
Per 100 gram serving providing 43 calories, beetroot is an excellent source (20% of the daily value) of folate and a good source (14% of daily value) of manganese, with other nutrients in low amounts.

1-Beetroot Dip
  • 2Tbsp- Hung Yogurt/ Greek Yogurt
  • 1 stalk- Lemongrass
  • 10-12- Basil leaves
  • 1tsp- Lemon juice
  • ½ Beetroot- Boiled n chopped
  • Salt- to taste
  • Black pepper- to taste
Blend all the above ingredients well.It should have a thick chutney-like consistency.
You can increase or decrease the quantity of any ingredient as per your taste.
Beetroot dip is ready.

Yogurt Dip
  • 2- Green chillies
  • 2- Red chillies
  • ½ Raw Mango- chopped
  • 1″ pc- Ginger
  • ¼ cup- Coriander leaves
  • ¼ cup- Mint leaves
  • 2 tbsp- Hung Yogurt/ Greek Yogurt
Blend all the above ingredients well. It should have a thick chutney-like consistency.
️You can increase or decrease the quantity of any ingredient as per your taste.
️Yogurt dip is ready.

How to assemble this Salad:

BEET ROOT SLICES SALAD

 INGREDIENTS    
  • 2beet roots
  • The above mentioned dips
     METHOD: 
  • Wash the beet roots properly. Peel them.
  • Boil them to 2-3 whistles or till they are little soft, easy to work with n pliable but not mushy.
  • After boiling cool them completely.
  • Cut in to thin slices.
  • Place one slice, put some yogurt dip, then other slice n then dip again. Top it up with beet root dip.
  • Enjoy this guilt free delicious treat!!!
