Salad with Pomegranate Vinaigrette
 
The word Salad brings the images of all the diet food in front of your eyes and diet food means boring bland dull food, isn't it?
But trust me you can bet on this salad. This is one thing which I want to hog, whether dieting or not. The only way to make this salad or any other salad scrumptious is this unique dressing.
This dressing is so amazing that it just took this otherwise boring salad to another level.
I made this for a party too and you have to believe me that my guests were hogging on this salad like anything. It was a big surprise for me and why not, in front of all the lavish main course dishes if people are taking second helpings of a salad then it has to be something special.
What I like the most about this salad apart from the dressing is addition of cottage cheese or paneer cubes. And this idea came from a big time paneer lover my son.
 
 
Now, without further ado, lets get into the recipe:

INGREDIENTS:

For salad

Rocket leaves- 2 cups
Orange- 1 (peel and deseed)
Apple- 1 (cut into slices)
Cucumber- 1 (cut into slices)
Cherry Tomatoes- 10
Red radish- 3-4 (cut into slices)
strawberries- 2
Black Grapes- 10
Cottage Cheese/ Paneer- 1 cup cubed
Pomegranate arils- 1/2 cup
Pecan nuts- 10
Cashew nuts- 10
Macademia nuts- 10

For Dressing

Pomegranate juice- 1 cup
White Vinegar/ Balsamic Vinegar- 2 tablespoon
EVOO( Extra Virgin Olive Oil)- 1/3 cup
Sugar- 1 teaspoon
Salt- 1/2 teaspoon
Freshly ground Black Pepper To Taste
 
 

DIRECTIONS:
 
In a small saucepan, over high heat, boil the pomegranate juice until reduced to one-third cup.
It will take approx. 10-12 minutes.
Remove from heat.
While still warm, stir in rest of the ingredients listed under dressing.
Set aside to cool.
Meanwhile, slightly roast the nuts in a pan (optional).
In a big bowl, mix all the ingredients of the salad.
Mix and toss the dressing with the salad.
Arrange the salad in a platter to be served. Throw in some roasted nuts and Voila! Your salad is ready!
