AMRITSARI CHOLE KULCHE

🎵🎼🎶Ambarsariya Mundya we kachiyaan kaliyaan na tod🎵🎧 was listening to this song n suddenly the image of Amritsari Kulcha was floating in front of my eyes.
Could not resist the temptation.
This delicious combo of Kulcha and Chole is a popular dish amongst North Indians. That is where the name Amritsari comes from. Amritsar is a city in Punjab and is the home of the famous Golden Temple. 
Amritsari Kulchas are stuffed variants of regular cults and are filled with potatoes,onions,indian cottage cheese(paneer) and spices.
Served with thandi thandi minty lassi🍹and Pyaaz ki chutney acting as ideal accompaniments to create a meal which can be hardly surpassed. 
 
 
🌞🌻INGREDIENTS:
(For 14-15 Kulchas)
🌞2 cups Maida (All purpose flour)
🌞2 cups Wheat flour(Atta)
🌞2tsp baking powder
🌞1tsp baking soda
🌞2 tsp salt
🌞2 tsp sugar
🌞2 tbsp Oil
🌞3tbsp Garlic butter( or you can use 5tbsp oil)
🌞1/2 cup yogurt
🌞1/2 cup warm milk
🌞Sesame seeds to sprinkle on kulchas(Optional)
 🌞🌻 Filling
🌞2 cup boiled and mashed Potatoes
🌞2 finely chopped Onion
🌞2 cup mashed Paneer
🌞 Red chilli powder To taste
🌞Chaat masala To Taste
🌞2 tsp Coriander powder
🌞2 tsp Garam Masala powder
🌞Salt To Taste
🌞Chopped Coriander leaves
 🌞 Mix together all the above ingredients for filling and make 14-15 lemon sized balls.
 🌞🌻METHOD:
 🌞Sieve the Maida and Atta and then mix it with the baking soda, baking powder, oil,butter, yogurt, sugar and salt in a bowl.
 🌞Add the warm milk and knead into soft dough. Make sure to add the milk gradually and not make the batter sticky.
 🌞Cover the dough with a damp cloth and keep aside for 2-3 hrs.
 🌞Take out the dough. Divide into 14-15 balls.
 🌞Flatten it and place filling in the centre,and dust the dough with flour.     With a rolling pin, flatten this ball out into a thick disc with very light hands. If u’ll roll it with pressure your kulcha will not puff up.
 🌞Sprinkle some sesame seeds.
🌞Heat ½ tsp of oil in a deep frying pan, and gently drop the flattened kulcha in the hot oil. Cook on both sides on low flame until the kulcha turns golden brown.
🌞The kulchas are ready to serve.

🔺Its my way of making this chutney/dip
🔺Chop onions.
🔺Soak them in vinegar water for some time( this will remove the raw taste of onions)
🔺Drain n wash onions to remove vinegar smell.
🔺In some water mix Coriander mint chutney, Tamarind chutney, Lime juice, salt,Red chilli powder. Add onions. Its done.
