Rooh means Soul and Bahar means Spring or Delight.

The name of this dish Rooh 'e' Bahar must have taken you to a heavenly world. And believe me one spoon of this delicious Ice cream will take your tastebuds to an exotic heavenly bliss. It's a party of flavors in your mouth. All the flavors bursting in your mouth gives peace and serenity to you and your soul and that is why the name Rooh 'e' Bahar justifies it completely.

You must be wondering why this name and how the idea of converting Kheer into Ice Cream came to my mind.
For my Bloghop event the theme was Ice Cream but with Indian Flavors. I didn't want to make the usual fruit flavored ice cream or kulfis. I was scratching my head to come up with something different and unique but easy and quick to make at the same time.
There was some leftover kheer which I made a day earlier in my fridge, one look at the bowl and the idea of converting it into Ice Cream came to my mind. Just added whipping cream and condensed milk and voila a great flavor is discovered in my kitchen. As i am a big fan of dry fruits/nuts and berries so how can I not add them in my Ice Cream. Added loads of nuts, cranberries and super healthy Goji berries too.
Does it ring a bell if I tell you that this is a no-churn Ice Cream. No churn means no ice cream maker required to make this sinfully delicious treat.
No Ice cream maker required and with just very few ingredients, you can now make fantastic and creamy ice cream at home.

For a person like me who is not a great fan of Ice Cream gorged on this one. I have no qualms in saying that this is the best Ice Cream of my life.

So let's get started by having a look at the Ingredients list.


INGREDIENTS:
 
Kheer- 200 ml
Whipping Cream- 500 ml
Condensed milk- 400 ml
Thandai Powder- 3 tablespoon
Mixed Nuts- 1 cup (chopped) (mix of almond, cashews,walnuts,pistachios and pine nuts)
Cranberries-1/2 cup
Goji Berries- 1/2 cup
Few dried Rose Petals to garnish

DIRECTIONS:

Start by chilling the kheer, condensed milk, whipping cream, bowl and whip attachment by keeping everything in fridge for minimum an hour.
 

Next, start whipping the cream in the bowl with the help of the whisk attachment. Whip till it gets soft peak consistency.
 

 
Start adding condensed milk in small batches and keep whipping on the lowest speed till all the condensed milk been added to the cream.
 

Give a good blend to the kheer to paste consistency.
 

Add it to the cream mix alongwith the thandai powder.
Whip again for 2-3 minutes.
 

Now, add chopped nuts and berries. Mix them all gently.
 
 

Pour the mix in an airtight container and keep in the deep freezer for 4-5 hours or overnight.
 

You can serve it in Ice Cream cones or in individual bowls.
