It’s time to brush aside our weaknesses, pains and bitter past memories and smear each other with colours of love, happiness, joy, harmony, trust and tolerance.

With Holi just round the corner, I am sure every household is gearing up to prepare their favorite sweets. No Indian festival is complete without the sweets. But the most quintessential sweet without which Holi is incomplete is Gujiya. Gujiya is one of the staple dessert prepared especially on Holi festival.
 
 

Gujiyas are sweet dumplings or fried crispy flaky pastries stuffed with sweet Mawa filling. The filling is extremely simple to make. Mawa combined with desiccated coconut, sugar and dry nuts creates the most yummy filling. This filling is stuffed in circular discs, folded, edges are sealed, then they are deep fried on low heat and get a glaze of sugar syrup.

The experimental me wanted to give a twist to this scrumptious quintessential ‘Holi’ sweet. Tadaaa!!! Here it is.
A fun spin on the must have HOLI favorite-GUJIYA!!! Crispy Phyllo/Filo pastry sheets cups, filled with easy to make flavorful and scrumptious Gujiya filling.
 
 
 
The filling for these gorgeous cups has been prepared in the traditional way. But the difference is the cover or the case in which this filling sits. Instead of making it the traditional way I have put the filling in the cups which I made using Phyllo Pastry sheets. You can say this is open Gujiya ;) They are looking so beautiful and so gorgeous!!!! Aren’t they?
Believe me they were as tasty and yummy too as Gujiyas are. So, this Holi give your Gujiyas a new Avatar and get all the praises and pats and accolades from family and friends!!!!
 
 


So let’s get started! Let me show you how you could make these yummy Gujiya Cups!!

There are two steps to make these Gujiya cups.
1. How to make Cups- for this please click here. I have made a separate elaborate post on how to make these cups.
2. How to make Filling
 
 

Recipe for the Filling-

INGREDIENTS:

Mawa/ khoya- 200 grams
Dessicated Coconut- 4 tablespoon
Castor Sugar- 1/2 cup
Almonds- 10-12 chopped
Cashew- 10-12 chopped
Pistachios- 10-12 chopped
Chironji- 2 tablespoon
Green Cardamom- 6-7 (Only seeds, crushed)
Saffron strands- 1 teaspoon
Thandai powder- 2 tablespoon
Ghee/ Clarified butter- 1 teaspoon
Milk- as needed (optional)
 
Dried Rose petals and Silver Varq- To Garnish

DIRECTIONS:

We will start by crumbling the Mawa.

Heat a non stick or heavy bottom pan. Put crumbled mawa in the pan. Keep the heat on low.

Keep stirring the mawa. It will start melting.
 
 
Cook the khoya properly until it releases fat and becomes bit brown.

It will take about 10 minutes to roast the mawa.

Take it out in a bowl and let it come to room temperature.
 
 
 
 

 
 
Meanwhile, in a pan add ghee and roast all the nuts, crushed Cardamom seeds, saffron and coconut.

You just have to roast them for 3-4 minutes.

Mix the roasted nuts in the roasted mawa.

When the mixture comes to room temperature add in the sugar and mix everything well.

(If you will add sugar in the hot mix, it will start melting)
 
 
 
If you feel that the stuffing is dry then add few teaspoons of warm milk.

(1 or 2 tablespoon will be enough)

Stuffing or filling is ready.



HOW TO ASSEMBLE

Take a prepared Phyllo cup. Scoop in about 2 tablespoon of filling in the cup.

Garnish with Dried Rose Petals and Silver Varq.

Enjoy the yummy twisty Gujiyas with Family, Friends and Colors!!!!
